Welcome back everyone! It’s 1st September, school holidays are almost over and normality and a proper routine shall resume in our household as of mid next week! Hope you all had a wonderful summer and managed to get a bit of well deserved rest and recharge your batteries!
I’ve spent last 6 weeks focusing on my family and let the blog slip a bit but I’ve managed to post one new recipe for my Ultimate Rocky Road as well as update this oldie but goodie – White Chocolate & Raspberry Blondies , which was more than I planned for.
Thank you so much to all who linked up with #BakingCrumbs over at Jenny’s Apply To Face Blog who shared 4 Retro Bakes round-up back in August. There were so many fantastic recipes, lots of them seasonal which I love like Jacqui’s (Only Crumbs Remain) Easy Peach and Redcurrant Cake.
I also need to mention two bakes which I loved that didn’t make this month’s round-up! They are The Ultimate Twix Cake by Lou (Crumbs & Corkscrews) and Rainbow Cupcakes by Kat (The Baking Explorer). You really should check them out!
NOW… ONTO THIS MONTH’S 6 PACKED LUNCH IDEAS
With school back this week many parents are facing old packed lunch dilemma wondering what to put in their kids (as well as their own) lunch boxes. Taking a look at last month’s recipes you’ve linked up I saw a nice mixture of sweet and savoury bakes that would make fantastic lunch box fillers! Some of them are quite healthy, some a bit less so but as it’s all about moderation and variety, they all have their place as lunch box offerings. I hope you find something that will tickle your fancy!
Vegan Apple & Date Muffins
I just love these gorgeous Vegan Apple & Date Muffins from The Peachicks Bakery! They are fruity, refined sugar, egg and gluten free too! Make a huge batch of these to pop in your own or your monsters’ lunchboxes if you like healthy treats! And don’t you forget about the apple slice on top!
Pea, mint & feta parcels
Now for something savoury and wonderfully portable! These light and full of flavour Pea, Mint & Feta Parcels from Coriander Cooks use filo pastry and everyone’s favourite freezer staple – frozen peas complemented by salty feta and some fresh mint! There are some chilli flakes for the brave too! Such a delicious change from a regular sarnie!
These Chocolate Flapjacks from Helen over at Cooking With My Kids are more of a treat but hey, who doesn’t like something chocolatey in their lunch box from time to time? It’s all about variety and moderation at the end of the day, isn’t it?
Spinach & Ricotta Rolls
These Spinach & Ricotta Rolls from Sylvie at A Baking Journey might be slightly more time consuming to make but it doesn’t mean they are difficult, not at all! Fluffy bread rolls with their own filling, and what a classic filling it is, are super convenient and will make you very very happy indeed!
Cherry Chocolate Muffins
Another fruity lunch box treat, this time with some fresh seasonal cherries! These Cherry Chocolate Muffins from Helen are a great little bake to make with your kids ahead of new school week.
Gluten Free Wholemeal Brown Bread
What would the packed lunch be without good old sarnie especially when it’s sarnie made with Kate’s (Gluten Free Alchemist) Gluten Free Wholemeal Brown Bread? This easy to make loaf doesn’t crumble, isn’t dry and stays fresh for days. Perfect!
WHAT I RECREATED IN JO’S KITCHEN LARDER LAST MONTH?
Well, I just had to try Choclette’s (Tin & Thyme) Chocolate Spice Cake with Whipped Chocolate Mousse. After baking with fruit quite a lot over the summer, I found myself craving simple chocolate cake but with a bit of a twist which in this case is addition of allspice or mixed spice and some mixed peel which I substituted with stem ginger. The cake is absolutely lovely and moist with gentle spicy undertones and that amazing whipped chocolate mousse which is light as a feather and simply divine. The cake uses wholemeal spelt flour and some kefir (quite healthy right?!) so here you’ve got your excuse as to why you should make it! Thank you so much Choclette for this fab recipe!
