    Butternut Squash & Chestnut Soup

    This Butternut Squash & Chestnut Soup is silky and creamy with no dairy in sight, just earthy flavours & savoury sweetness from butternut squash and chestnuts. Pure comfort!

    I am a bit soup mad this time of year and must have one constantly on the go, mixing and matching veggies, flavourings, herbs and spices to keep things interesting. I really don't think you can beat a nice soup and a slice of delicious bread or a handful of homemade croutons as lunch offering. My Irish Soda Bread made with yogurt makes perfect accompaniment, so do my Vegan Cheese Scones, yum!

    This Butternut Squash & Chestnut Soup is a real flavour sensation! Both butternut squash and chestnuts offer gentle savoury sweetness that is so wonderfully comforting. There is absolutely no need for cream in this soup. Both butternut squash and chestnuts when blended well (see below) will provide all the creaminess you'll need!

    High speed blender equals creamier soup

    I've made this soup when testing my Froothie Evolve High Speed Blender for which I am an ambassador (you can check out the full review here). Due to its high power of blending (1400W) there is no need for any dairy products at all to provide creaminess. This soup couldn't be creamier or silkier even if it wanted to! Of course I'll leave it up to you when it comes to adding any dairy enhancements to this soup as you might prefer to do that, which is fine!

    Butternut Squash & Chestnut Soup - Ingredients

    This recipe is so super simple and requires only handful of ingredients which really shine their flavours through. Addition of chestnuts made me feel really wintery and festive for some reason and I must say it is a very nice feeling indeed. I also think that we don't use chestnuts enough and they are so super versatile (check out my Brussels Sprouts, Bacon & Chestnuts Macaroni Cheese and these super delicious Dark Chocolate Cranberry Chestnut Cookies )

    Now onto the ingredients:

    Butternut Squash

    Chestnuts (vacuum packed, ready cooked ones)

    Onion

    Garlic

    Dried Sage

    Nutmeg (freshly grated)

    Stock (veggie or chicken)

    Salt & Pepper

    Making Butternut Squash & Chestnut Soup

    I made this lovely soup from start to finish in my new Froothie Evolve using pre-programmed "smooth soup" setting.

    All I had to do is put the ingredients into the jug, pop the lid on, ask Froothie to make my soup (oh yes, you can voice activate this funky blender) and exactly 30 minutes later it was all done! That's all there is to it!

    However, If you'd like to make the soup without this blender, simply put all the ingredients (prepared as per recipe card below) in a large stock pot or soup pot, pour over the stock, bring to boil and then simmer (partly covered) until butternut squash is soft (about 20-30 minutes). Puree with stick blender until smooth, season to taste and serve garnished with some roasted pumpkin seeds and lots of freshly grated nutmeg (if you want to)!

    Few tips when making Butternut Squash & Chestnut Soup

    • I haven't included nutmeg in the soup recipe itself as it can be an acquired taste hence better when added to the individual portions. I think it goes really well with all the flavours here and would recommend generous grating when serving.
    • This recipe yields just under 1.8ltr soup which makes 4 really generous or 6 smaller portions depending on the appetites and accompaniments.
    • Soup will keep in the fridge for 3-4 days and it is freezer friendly for up to 3 months.

    Butternut Squash & Chestnut Soup

    Ingredients

    Metric - US Customary
    • 1 butternut squash (850g-1kg unpeeled weight) peeled, deseeded and roughly chopped
    • 1 onion peeled and quartered
    • 2 garlic cloves peeled and left whole
    • 180 g pack of whole cooked chestnuts I use Merchant Gourmet*
    • 800 ml vegetable or chicken stock (from cube is fine) I use Kallo*
    • 2 teaspoon dried sage
    • 2 teaspoon sea salt
    • freshly grated nutmeg to serve see notes

    Instructions

    • Prepare all the ingredients as per instructions above.

    For Froothie Evolve users

    • Put all the ingredients into Froothie Evolve cooking jug and put the lid on. Turn the machine on and choose Smooth Soup option from the LED display menu on your blender. Alterntively, instruct froothie via voice activation saying "Hey Froothie, Make my Soup". Froothie Evolve will start pre-programmed soup making function and your soup will be piping hot and ready in 30 minutes. Taste and adjust seasoning if requred.

    On the hob method

    • If not using Froothie Evolve, simply put all the ingredients including stock in the large soup/stock pot, bring to boil and then simmer partly covered for 20-30 minuts or until butternut squash is tender. Puree with stick blender until smooth. Taste and adjust seasoning if requried.
    • Serve granished with some roasted pumpkin seeds and freshly grated nutmeg.

    Notes

    • Nutritional information is approximate, per serving (based on 6 servings) and should be treated as a guideline only.

      The soup looks delicious. I like the idea of just adding all the ingredients into the Froothie and to set it to cook under the soup function. I am still figuring out how to use all the functions and can't wait to make soup.

      Love the sound of the added chestnuts, I haven’t had them in soup before! Loving how smooth soup is when made in the Froothie Evolve too, my carrot soup today was so creamy with no lumps at all in sight!

      This soup looks delicious. I love the idea of combining squash and chestnuts. I make a mushroom soup with chestnuts but have never thought about putting them with squash. Will definitely be giving it a go!

      Wow, this soup sounds absolutely delightful. I love the flavour of chestnuts but would not have thought of adding them to soup. I bet they go really well with squash too.

      That blender is just ace at making soup super smooth. I made a squash soup too, but didn't bother to peel it. You'd never have known.

          Butternut squash has quite a soft skin, I'm not sure I'd leave it on for all squashes, but it worked brilliantly. I was impressed.
