Oven Baked Pork Chops with Carrots & Cheese Crust

Oven Baked Pork Chops with Carrots & Cheese Crust is a perfect family meal that is easy to prepare, pop in the oven & forget! It gets thumbs up every time!

Ingredients

  • 4 pork loin chops or boneless pork chops any visible fat trimmed
  • 4 carrots peeled and thinly sliced
  • 1 onion peeled and thinly sliced
  • 2 teaspoon (heaped) sweet paprika powder
  • 1 teaspoon (heaped) mixed herbs
  • 4 tablespoon (heaped) mayonnaise
  • 100 g grated cheese mature cheddar works well here
  • Spring onions to garnish
  • salt and pepper
  • 1 tablespoon rapeseed or olive oil for the baking dish

Instructions

  • Prepare ovenproof baking dish (roughly 33x23cm/ 13x9inch) by lightly oiling it.
  • Spread sliced carrots evenly at the bottom of the dish.
  • Follow by layer of thinly sliced onions.
  • Sprinkle the veg with paprika and mixed herbs.
  • Trim the fat of pork loin chops if you wish and give every slice a good bash with rolling pin or meat tenderiser to make it nice and thin. Season each slice with salt and pepper.
  • Place seasoned steaks over the vegetables.
  • Spread mayonnaise over the meat in thick and even layer.
  • Sprinkle grated cheese.
  • Cover with aluminium foil (or the lid if your baking dish comes with one) and bake at 180°C/350F/Gas Mark 4 for about 1 hour after which take the foil/lid off and bake for another 15 min for the cheese to create nice, brown crust.
  • Sprinkle with spring onions and serve with your choice of sides.

Notes

  • Freezer friendly. Freeze baked and cooled dish in freezer safe container. Defrost in the fridge overnight and reheat in the oven (using oven safe dish) or microwave until piping hot.
