Easy Chickpeas & Carrot Falafel Burgers

Quick, easy and delicious falafel burgers bursting with chickpea and carrot goodness and spiced to perfection. Wholesome, mid-week family supper with minimum fuss!

Ingredients

  • 2 400g tins of chickpeas drained and well rinsed
  • 1 large or 2 smaller carrots peeled and cut into chunks
  • 2 garlic cloves peeled
  • 2 teaspoon ground cumin
  • 2 teaspoon ground coriander
  • 1 small bunch of fresh coriander (cilantro) leaves and stalks
  • ½ teaspoon sea salt (and more to taste)
  • 2 tablespoon (heaped) gram flour (chickpea flour) or plain flour plus extra for dusting
  • ½ lemon (zest and juice)
  • 2 tablespoon olive oil/rapeseed oil

Instructions

  • Put all the ingredients in the bowl of food processor and whiz until smooth. Taste and adjust seasoning with salt and pepper as per your liking. 
  • With floured hands shape the mixture into 4 large patties (feel free to adjust the size of the patties as per your needs especially when feeding kids when small size patties would be more appropriate). 
  • Heat up the oil in a large non-stick frying pan and fry your falafel burgers until nicely browned and warmed through ( 3-4 minutes per side). 
  • Serve in a bun or flatbread and sides of your choice. 

Notes

  • Nutritional information is approximate and meant as a guideline only.
  • Feel free to whiz your falafel mixture to the consistency as per your liking. My kids like their patties really smooth but we prefer them slightly coarser.
